Method of Preparation

Soaking: Rinse the chana dal in cold water 2–3 times. Soak in water for 4–6 hours (or overnight). After soaking, drain the water and thoroughly dry the dal on a clean towel or paper towels until all moisture is removed.

Preparing the spices: Choose one of the spice mix options. For a richer flavor, roast the ground spices in 1–2 tbsp of hot ghee or oil for 10–15 seconds, stirring constantly to prevent burning.

Frying: Heat oil in a deep skillet or fryer to 170–180°C. Fry the chana dal in small batches for 5–7 minutes until golden and crisp. Place on paper towels to remove excess oil.

Mixing: Transfer the hot chana dal to a large bowl, add the spice mix (roasted or raw), and toss thoroughly to evenly coat the dal with spices.

Cooling and storage: Let the chana dal cool. Store in an airtight container for up to 2–3 weeks.

Preparation: Mix the spices without roasting or lightly roast in 1 tbsp of oil for a milder flavor, then add to the chana dal.
